Our family began producing Lemoncello at the beginning of the 50s, when my
great grandfather came across this great liquor on one of his business trips.
His son, my grandfather, started producing it following a recipe that he had perfected after several trials. The production was limited and for private consumption, for friends and relatives and for those who had supplied him with the lemons and were glad to accept a bottle of his golden elixir in exchange.
That production method was the standard until a few years ago when our goal became giving more people an opportunity to enjoy this product with their own families.
The choice for the raw materials we use in our products is very simple: the requisites are that they be genuine, natural and high quality. The lemons we use are extremely important and that’s why our supplier comes from the famed Amalfi coast. The specific variety is called “Femminello Sfusato”, the reference to femininity comes from the elongated shape of the lemon which is rich with essential oils and terpens-substances give flavor, odor and color to our lemoncello. All of the lemons we use are certified “NOT TREATED”with chemical products so we are able to use the lemon peel as well with peace of mind.
As far as milk goes, which is only used in our Cream of Lemoncello, we buy directly from small Tuscan farmers with guaranteed fresh milk. The sugars used all come from a series of Italian companies that carry certificates to guarantee the quality of the product. Even the water we use comes from the heart of the Tuscan Apennine Mountains which is light and excellent quality. The alcohol we use is ethyl 95 proof from first choice raw materials produced by a renowned distillery.
The initial steps for making Lemoncello and Cream of Lemoncello are the
same: two days after having been picked, the lemons arrive from the Amalfi
coast. The lemons are extremely fresh, in particular the peel: it’s so rich in
essential oils, that if you peel it, you get the sensation that you’ve just dipped
your hands in a bucket of oil!
The peels, which are dripping liquids, are immersed in 95 proof alcohol where they will add color, flavor and odor to the liquor. After 15 days the peels are filtered from the alcohol obtaining a semifinished product, this is the time when we must decide which liquor we’d like to produce.
To produce Lemoncello we add sugar which has been previously been dissolved in water to our filtered alcohol to get the final product. The lemoncello must then be kept in a steel reservoir for 5 days: by doing so, we allow the ingredients to blend together naturally. The result is a homogenous liquid and with a consistency that exalts its flavor. At this point, the lemoncello is filtered with a cotton cloth and bottled.
To produce Cream of Lemoncello we add sugar which has previously been dissolved in fresh whole milk to the semi-finished product. There is a fundamental step which is necessary in making this liquor: it must be slowly mixed with immersion blender for 40 minutes. This very important step rewards us with a creamy, light and consistent liquor. After five days in the steel reservoir it too is ready to be bottled.
Our products are derive from artistically, manual methods. This is the only way that we are able to guarantee the quality that sets our product apart (from those mass produced). The lemons arrive at our lab within 48 hours of having been picked. They are then carefully washed under running water and are used within 8 hours of delivery. This system allows us to use fresh, whole lemons from which we will extract an elevated concentration of rich substances. The peeling of the lemons is done exclusively by hand using specific tools that allow us to choose the best parts of the peel to incorporate in the product and which parts should be eliminated. The fact that we use lemons that have not been treated chemically means that there are occasional imperfections on the peel that are better not to be used. (Unfortunately all natural products have this characteristic). Automatic machines that peel lemons are highly effective and would save us a lot of time, but at what cost? It would certainly be a detriment to the quality of our product and our sincere desire to offer a Tuscan made product of excellent quality in line with those produced in this region by those before us.
My family and I come from Tuscany. This land is rich with history and it’s in
our DNA and it’s our intention to represent this land to the best of our ability. “
L’Oro del Marzocco” is in homage to our beloved Tuscany.
“Il Marzocco”is a statue of a lion with a shield on which is found a lilium, crest of Florence as well as the Dé Medici coat of arms. In the long gone 15th century, Lorenzo Dé Medici used to use the symbol of the Marzocco in the cities and churches he conquered as a symbol of his power.
Like many towns and villages in Tuscany, even in the church here in Larciano and the small building where we do business you’ll find the famous statue. Lorenzo Dé Medici was struck by an illness and he was instructed by his doctor to drink freshly squeezed lemon juice daily. His recovery was so miraculous that he decided to create lemon groves in Florence, which, for many centuries were the largest in all of Europe in homage to the aromatic and curative peculiarities of this magnificent fruit. In our products, through fruity and floral notes, one breathes history.
Our products are natural and derive exclusively from manual and artistic
methods without the use of chemical substances, colorants, conservatives,
artificial flavors or sulfites. We firmly believe that anything we eat or drink
should respect our well being and this is why the working time needed to make
this product is slow; just as nature demands.
Our Lemoncello is 27 % proof and the Cream of Lemoncello is 18,5% proof. The ideal temperature to serve is between -15 and -20°. Our products are perfect after dinner as a digestive. If possible, keep your glasses in the freezer. Lemoncello can also be served as an aperitif mixed with prosecco or shaken with a bit of vodka and soda. It is also excellent to add to a cup of fresh strawberries.
Cream of Lemoncello is best combined with strawberries or succulent wild berries. Both of our products do not require refrigeration as both the alcohol and the sugar serve as natural conservatives. This is also the reason why there is no expiration date. Once opened, it is recommended that you consume it within a few weeks.
